Recipe No. 36 — Lemon buttermilk cake

»I bake a lot and usually, when being invited for dinner, I'm the one contributing dessert. A while ago I got this recipe of a juicy lemon-olive oil cake from a dear friend and ever since it's been my absolute go-to recipe for any occasion.«



150 g sugar
Zest of 1 orange
Zest of 2 lemons
2 eggs
120 g buttermilk or yogurt
170 g olive oil
150 g flour
1 tbsp baking powder
1 pinch of salt

170 g powder sugar
Juice of 1 lemon
Lemon zest and fresh herbs (like thyme) for decoration


1. Preheat oven to 180°C.

2. Combine sugar with lemon and orange zest in a bowl—use your hands to massage the zest with sugar to get out all the flavor.

3. Add eggs and beat with a hand mixer until the mixture is light yellow and fluffy.

4. Add buttermilk (or yogurt) and olive oil. 

5. In a separate bowl mix flour with baking powder and salt. Carefully fold in dry ingredients into the batter. 

6. Bake for 40-50 mins.

7. For the frosting mix powder sugar with the lemon juice. Pour over the cake while still warm. 

8. Decorate with lemon zest and fresh herbs.
