Recipe No. 6 — Petra Gardefjord
90s Spinach Soup
Ingredients
5 dl vegetable broth
2 tbsp flour
5 dl milk
1 box frozen, chopped spinach, about 400g
Salt & pepper
Additionally
A lovely bread
1 half egg each
(Pancetta for the meat eaters)




Method
1. Make the broth (we use a stock cube).
2. Stir the flour in some of the milk and mix it with the broth. Let it boil while stirring and add the rest of the milk. Let it boil for 3-5 min.
3. Add frozen spinach to the soup and let it simmer until the spinach has dissolved. Simmer for a few more minutes and season with salt and pepper. Add an egg and maybe some crispy pancetta.
