Recipe No. 31 — Mélanie Vassart

Rustic pear, praline and chocolate tart


For the pastry:
250 g flour
125 g tempered butter
1 whole egg
2 tsp powdered sugar
1 tsp cold water

For the tart:
200 g milk chocolate
100 g praline
3 pears
Pecan nuts


For the pastry:
1. Mix by hand the flour with the butter cut into pieces, then add the two tablespoons of powdered sugar, the whole egg and the spoon of cold water.

2. Form into a ball, wrap in clingfilm and refrigerate for 30 minutes.

For the tart:
1. Cut the pears in half and then into thin slices lengthwise to keep them aesthetically whole.


To assemble:
1. Spread the pastry on baking paper, add the chocolate praline preparation and arrange the pears in a star shape with a long knife. Add a few pecans.

2. Fold the edges of the pastry over the pears and brush the whole with a mixture of water and sugar.

3. Bake at 180°C for about 45 minutes.
