Recipe No. 3 — Laila Gohar
Fava Bean Purée
1 lb dry shelled fava bean
1/4 c olive oil
2 Tbs salt
1. Wash the beans and then place in a large pot and cover with water. Cut the onion in half and add in. Add the oil. Season with salt. Taste the water, it should be salty like the sea. Cook uncovered for 40 mins or until the fava is completely soft.
2. Drain the water (reserve 1/4 cup of it) and remove the onion and put the beans into a blender. Purée until totally smooth. Add the reserved liquid. Add olive oil on top. Taste for salt.
